paleo meal plan: january 2014

My husband is an amazing cook. Cooking is for him what shopping is for me. It relaxes him, helps him focus, gives him a creative outlet. And can I just say how ecstatic I was to discover in our courtship that the man loves to cook AND he’s good at it?!?! He chops and purees and steams and brazes and boils and grills away in the kitchen, and at the end of it all a delicious mouth-watering plate of fantastic-ness is sitting before me. For his birthday last year I got him a gift certificate to take a cooking class with my mom at the Viking Store. They are kindred spirits when it comes to cooking, so they loved every minute of it. I am beyond-words grateful for him and his mad cooking skills.

Now, it might go without saying after all of this high praise over my husband’s culinary magic that I do not share his affinity for cooking. It’s not that I can’t cook, it’s that I simply don’t prefer to cook. Of course as a single gal for several years I didn’t starve waiting for some chef extraordinaire to sweep me off my feet (although that is what happened), but I cooked only when absolutely necessary. And though I will cook from time to time in our home now, it’s not my strongest quality. It’s not where I shine.

As a wonderful compliment to my husband’s forte for food, I am a planner. I love to plan. Going on a trip? Let’s plan! Throwing a party? Let’s plan! Making dinner? Let’s plan! Several months ago when we started eating paleo my husband expressed how it was bringing on undue stress in his life to come up with meals for us. Thus, we determined to join forces and combine his cooking expertise with my planning/organizing expertise. What a team! Since then, I have derived a monthly meal plan complete with shopping list so that we can easily see what’s for dinner. I try to throw in a new recipe or two each week to keep things interesting. So far, so good. We’re eating well and maximizing our strengths all at the same time.
