paleo meal plan: february 2014

I was super excited that so many of you found my paleo meal plan from January and that it was a big hit for you! We REALLY enjoyed the honey chicken thighs… yum, yum, yum! I’ve generally not been a big lover of the dark meat, but those chicken thighs made a convert out of me. And the pork chops with onions and pears… OH. MY. These two dishes are now both a regular part of our monthly meal plan FO’ SHO’!

As I was planning for February, I’ve had a hankerin’ for some sort of new seafood dish. I’ve grown to really like seafood. I can remember being a little girl and cringing at the thought of anything “fishy.” Back then, I’d take a burger any day of the week over a crustacean. But as my palate has “matured” I’ve become quite fond of the oceanic options. So, in February we are going to try a new recipe from our Practical Paleo book called Pesto Shrimp & Squash Fettuccine. Doesn’t that sound delicious? I’ve missed real Italian food since eating paleo, so this will be quite a treat!
