february sweet treats series :: chocolate chip cookies {paleo}

I have a sweet tooth and I married a man who has more of a sweet tooth than me. We both love a little somethin’ sweet from time to time: after a meal, at a party, in the middle of the day for no reason at all. Although my hubs has cut back on his mid-afternoon chocolate run to Whole Foods in the past year or so, particularly since eating paleo (read: we were keeping the chocolate venders at Whole Foods in business!).  Alas, as we’ve been more conscious of what’s healthy and what’s not, we’ve discovered that our cravings for sweetness can easily be satisfied in healthier ways. Who knew I’d love maple syrup so much?! We keep it in stock since it’s the base for many-a-paleo recipes. Since we are akin to the sweet, I thought it would be a help to other sweeties out there to offer up some of our favorite sweet treats. Thus, my “February Sweet Treat Series” begins!

One of our favorite finds in the paleo treats department are these paleo chocolate chip cookies from paleoplan.com. OH. MY. They’re scrumptious, and excellent paired with a cup of coffee!

Here’s what you need:

  • 3 cups almond flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup raw honey
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1 tsp vanilla extract
  • 1 1/2 cups Enjoy Life Semi-Sweet Chocolate Chips

And here’s how to make them:

  • First, preheat the oven to 375 and line a baking sheet with parchment paper.
  • In a small mixing bowl, combine the dry ingredients and set aside.
  • In a medium mixing bowl, beat the eggs, honey, and vanilla extract with a hand mixer or wire whisk.
  • Pour the wet ingredients slowly into the dry ingredients and beat with a mixer or fork until combined well.
  • Add the melted coconut oil and continue to blend until combined.
  • Stir in chocolate chips.
  • Drop tablespoon size balls of cookie dough onto prepared cookie sheet.
  • Bake for approximately 8-10 minutes. (Yields 20-24 cookies.)

  1. O.K! These cookies are FABULOUS!! I got to have them last week in Ronda’s cozy home with fruit and coffee and wonderful fellowship! Oliver was fun too (the dog).
