We had our good sister-friend Amy over for dinner earlier this week to thank her (finally!) for taking our Christmas photos last year. She’s an amazing photographer (you can see her work here!), and a dear friend. We decided on one of our favorites: salmon with asparagus. Yum with yum. This is one of the easiest meals ever, so don’t blink cuz you might miss the instructions. ;)
We started with three half-pound salmon filets. Then, we lightly seasoned them with butter, dill, sea salt, and fresh cut lemon slices.
We put three pats of butter in the bottom of a glass baking dish and placed the three filets on top of each pat of butter.
Then, we sprinkled dill and sea salt over the top of each filet, put another pat of butter, and added three fresh cut lemon slices atop each filet as well.
We stuck them in the oven on 350 degrees for 20 minutes and let them soak in all that lemon-buttery goodness. While it was baking, we washed and cut the asparagus and put it in a cast iron pan with some olive oil to grill.
We served it up with something to drink and voila! The most simple and delicious meal ever. Enjoy!
