mashed red potatoes {crockpot}

We just came through a peaceful, relaxing, joyful Christmas celebration! My hubs made his delicious turkey, and I made all the “fixins”! Since all these delectable side dishes take time, I do some pre-prep and take full advantage of having an instant pot and a crockpot. These mashed red potatoes are tasty!

INGREDIENTS

  • 6 lbs of red potatoes
  • 3/4 cup Kerry Gold butter (or butter of choice)
  • 1/2 to 3/4 cup unflavored almond milk
  • Salt & pepper

INSTRUCTIONS

  • Wash the potatoes and cut into 1-inch cubes (skin on)
  • Lightly grease your crockpot (I use coconut oil)
  • Place cut potatoes in crockpot and fill crockpot with water to just cover potatoes
  • Add 1 T salt to crockpot
  • Cook potatoes in crockpot on high for 4 hours (depending on how your crockpot cooks, you may cook for less time)
  • Once potatoes are soft (meaning you can easily stab through with a fork), drain water and return potatoes to crockpot
  • While potatoes are still steaming hot, cut 3/4 cup butter into 1-inch pieces and distribute over the top of the potatoes, then stir butter into potatoes until melted
  • Now add 1/2 cup of the almond milk and start mashing with your masher; add the additional 1/4 cup of almond milk as needed
  • Add salt & pepper to taste
  • Once potatoes are mashed and well combined with other ingredients, remove from crockpot and place in serving dish or bowl
  • Enjoy!
