Weekly staple in the Waters Home!
INGREDIENTS
- 1.5 lb ground bison *if unable to purchase bison, try ground turkey or ground chicken
- 1 can of beans (your choosing!)
- 1 packet taco seasoning (low sodium if possible)
- 1 small bag of greens (your choosing!)
- 2 large tomatoes, chopped
- 1 avocado
- 1 cup of rice, cooked
- Shredded cheese (optional)
- 1 bunch cilantro (optional)
INSTRUCTIONS
- Cook rice over stovetop or in a rice cooker.
- White rice is cooking, add oil and ground meat to a pan over medium-high heat (break up lumps with a spoon or spatula).
- Add taco seasoning and cook for about 6-8 minutes or until browned.
- While taco meat is cooking, wash and chop tomato and avocado.
- Drain and rinse beans.
- In a bowl, add lettuce, rice, beans, meat, tomato and avocado. Add cheese and cilantro if you’d like.
- Enjoy!
