Weekly staple in the Waters Home!

INGREDIENTS

  • 1.5 lb ground bison *if unable to purchase bison, try ground turkey or ground chicken
  • 1 can of beans (your choosing!)
  • 1 packet taco seasoning (low sodium if possible)
  • 1 small bag of greens (your choosing!)
  • 2 large tomatoes, chopped
  • 1 avocado
  • 1 cup of rice, cooked
  • Shredded cheese (optional)
  • 1 bunch cilantro (optional)

INSTRUCTIONS

  • Cook rice over stovetop or in a rice cooker.
  • White rice is cooking, add oil and ground meat to a pan over medium-high heat (break up lumps with a spoon or spatula).
  • Add taco seasoning and cook for about 6-8 minutes or until browned.
  • While taco meat is cooking, wash and chop tomato and avocado.
  • Drain and rinse beans.
  • In a bowl, add lettuce, rice, beans, meat, tomato and avocado. Add cheese and cilantro if you’d like.
  • Enjoy!
