I sure did enjoy all the sweet treats we tried during the month of February. Coming into March I’m sure we’ll have a few delights along the way as well. One in particular that we’re going to try came from our sweet friend Alyssa. She is as kind as the day is long and so thoughtful as well. In January to thank us for being her pastors she made these seriously INCREDIBLE almond butter cookies.
They are moist, delicious AND paleo. They have just the right amount of sweetness and the texture makes them double the yummy.
Here’s what you need to make these amazing morsels of goodness:
- 1/2 cup almond butter (click here to see how to make your own)
- 1/4 cup dried cranberries
- 5-6 chopped dates
- 1 tblsp coconut oil
- 1 egg
- 1 tblsp honey
- 1/4 cup chopped nuts (she used pecans, but you can use whatever you’d like!)
To make them, just throw all of the ingredients into a bowl and mix them together with a spoon or spatula.
Once all the ingredients are mixed well together, use a cookie scoop to scoop the dough onto a cookie sheet (be sure to put parchment paper down first).
Once they’re all scooped, put them in the oven at 350 degrees for 12-14 minutes. Let cool and then eat.them.up. {Yields 12-14 cookies!}
