I almost called this post “slap yo’ mama good blueberry cobbler,” but I love my mama too much to call it that! :) I have to confess, I am not the world’s biggest fan of blueberries, but seriously this recipe is CRAZY GOOD! And, guess what? It’s paleo, too!
To make this delectable dessert, here’s all you’ll need:
- 2 containers of blueberries from your local grocer or farmers market
- 1 cup almond flour or almond meal
- 1/4 cup of chopped walnuts
- 1/4 tsp cinnamon
- 1/4 cup of melted butter
- 2 tblsp maple syrup
- 2 tsp lemon juice
- 1 tsp vanilla
- pinch of salt
The easy-ness of this summertime dessert makes it a delight to make (and eat, of course!). First, wash up those blueberries really well with some cold water, and then put them in the bottom of an 8×8 baking dish.
Mix together the almond flour, chopped walnuts and cinnamon. Then add the butter, maple syrup, lemon juice, vanilla and salt. Mix it up good and pour it directly on top of the blueberries.
Be sure to spread the almond flour mixture evenly across the top of the blueberries without touch the sides of the baking dish if possible (as you can see, I got a little on the side!).
Next, put it in the oven at 375 degrees for about 40 minutes, or until the topping is golden brown and the berries are bubbling. It smells delicious when it’s baking!
Serve it up warm with a scoop of coconut milk ice cream and indulge in this good-for-you decadent dessert. Enjoy!
