homemade mayonnaise



  • 1 16 oz. mason jar (a narrow jar is best)
  • Immersion blender
  • 1 cup olive oil
  • 1 large egg yolk
  • 1 T apple cider vinegar
  • 1 T water
  • 1 tsp salt


  • Separate yolk from whites. Save yolk.
  • Place yolk in mason jar with apple cider vinegar, water, salt and olive oil.
  • Use immersion blender to blend until smooth and stiff. Don’t over-blend or it will become too liquidy.
