pumpkin bison chili



  • 1 lb ground bison
  • 1 sweet onion, diced
  • 1 T coconut oil
  • 2 cloves garlic, minced
  • 2 T chili powder
  • 4 large tomatoes, diced (or 1 15oz. can diced tomatoes)
  • 2 cups pumpkin puree
  • salt & pepper to taste


  • Brown the bison slowly in a nonstick pan, or in a stainless steel pan with a little water since the meat is very low in fat.
  • Stir in the onions, garlic, and coconut oil and sauté together for two minutes.
  • Combine the cooked bison mixture with the rest of the ingredients and simmer for 45 minutes on low.
