PUMPKIN BISON CHILI
- 1 lb ground bison
- 1 sweet onion, diced
- 1 T coconut oil
- 2 cloves garlic, minced
- 2 T chili powder
- 4 large tomatoes, diced (or 1 15oz. can diced tomatoes)
- 2 cups pumpkin puree
- salt & pepper to taste
- Brown the bison slowly in a nonstick pan, or in a stainless steel pan with a little water since the meat is very low in fat.
- Stir in the onions, garlic, and coconut oil and sauté together for two minutes.
- Combine the cooked bison mixture with the rest of the ingredients and simmer for 45 minutes on low.
